Roasted Okra Recipe

Simple roasted okra is a quick side dish on a busy night, here is the preparation method

  • 1 pound of okra (or more)
  • Olive Oil
  • Salt
  • Garlic Powder
  • Pepper
  1. Preheat oven to 400 degrees.
  2. Cut tops off okra and slice lengthwise.
  3. Place on a large baking sheet and drizzle with olive oil (or coconut oil).
  4. Toss to coat.
  5. Sprinkle with salt, garlic powder and pepper (omit pepper if on autoimmune protocol).
  6. Bake for 18-22 minutes until soft and just stating to brown on the ends.
