Quinoa pilaf

A great recipe for a quick and easy lunch or dinner. Healthy and tasty!! great lunch for kids at school or hubby at work.

1 cup Quinoa
1 large red pepper chopped
1 potato chopped
1 red onion chopped
2 cloves garlic chopped.
Handful of mushrooms chopped.
Can add green peas, carrots and any other vegetables you like.

Sauté all the vegetables in 1tbsp olive oil. Add 1tsp cumin seeds, a pinch of turmeric powder, 1tbsp coriander powder, 1tsp red chilli powder. Add salt & black pepper. Stir for about 5-7 mins.

Add Quinoa and 2 cups of water and cover the pot.
Let it cook for about 15 mins (check if the quinoa is cooked, don’t let it over cook and get sticky).

Top it with fresh coriander leaves and squeeze fresh lemon.
